Almond Milk Vanilla 
Panna Cotta With Caramelized Citrus Fruit

Ingredients For Panna Cotta

  • 6 silver gelatin leaves
  • ¼ cup sugar
  • ¾ tsp vanilla purée
  • 2½ cups almond milk
  • For caramelized citrus fruit
  • 1 cup sugar
  • 2 cups orange juice
  • 4 orange segments
  • 1 grapefruit segment

Dissolve gelatin, sugar and vanilla 
into half of almond milk. Stir in remaining almond milk, pour into martini glasses and refrigerate overnight.

Place 1 cup of sugar in a large skillet over medium heat, stirring continuously with a heat-proof utensil. When sugar caramelizes into 
a rich amber color, deglaze with orange juice.
Strain caramel mixture and pour over the citrus fruit segments. Once caramelized fruit cools, pour over panna cotta.

Almond Florentine garnish not included in recipe.
